LAMB ALMOND KORMA | BADAMI GOSHT KORMA - Eid-Ul-Fitr special

A mildly spiced recipe with great creamy texture to enjoy this EID.

This korma recipe is a delicately flavored mutton dish cooked with rich Indian spices along with rich almond paste. The almond paste makes the texture really very amazing. This is commonly prepared during the festival of Eid ul Fitr.

INGREDIENTS ā–Ŗ Mutton - 500gms. ā–Ŗ Soaked almonds - 1 cup ā–Ŗ Yogurt - 2 cups ā–Ŗ Ghee / Clarified butter - 4 tablespoon ā–Ŗ Sliced large onions - 3 ā–Ŗ Mustard oil for frying onions. ā–Ŗ Ginger paste - 1 tablespoon ā–Ŗ Garlic paate - 1 tablespoon ā–Ŗ Chili paste - 1 tablespoon ā–Ŗ Salt to taste ā–Ŗ Kashmiri red chilli powder - 2 tablespoon ā–Ŗ Turmeric powder / haldi - 2 teaspoon ā–Ŗ Cumin powder / jeera powder - 1 teaspoon ā–Ŗ Coriander powder / dhania powder - 1 teaspoon ā–Ŗ Crushed cardamon / elaichi - 3 ā–Ŗ Cinnamon stick / dalchini - 1 inch stick. ā–Ŗ Rose water / Gulaab jal - Few drops.



PREPARATION ā–Ŗ Heat oil in a pan deep fry the sliced onions and keep it aside. ā–Ŗ For the badam paste - Peel the soaked almonds and put it in a mixing jar. Then add 3 tablespoon of curd to it and make a fine paste.


METHOD Step 1- Heat 4 tablespoon of ghee in the same pan which was used to fry the onions. Once hot, add the mutton pieces to it and fry in high flame. Fry until golden brown till about 10 minutes. Step 2- Then add the crushed cardamom and cinnamon. Then add ginger-garlic-chili paste to it and fry until the raw smell goes off. Step 3- Then add salt, turmeric, red chili powder,coriander powder, cumin powder, badam paste and saute until the oil seperates. Step 4- Once the mutton and the masala gets combined and fried, add the remaining yogurt into it. Step 5- Mix it well. Add little water according to the consistency needed and cover and cook in medium flame for about 20 minutes or till the meat is tender. Step 6- Finish it off with few drops of rose water. Step 7- Serve hot with Indian bread or rice.
