Gudwali kheer | Gud'er Payesh
Kheer/Payesh is an Indian sweet delicacy which you find in every house in India during festive season for sure. 💫 Made with basic ingredients this is everyone's favourite. Hope you're all safe and are at your home.✨ The use of jaggery in this dish gives it a very nice flavour. Not only it reduces the sugar amount consumption but also makes it very delicious.

INGREDIENTS
 â–ª 1/2 cup rice - soaked and drained. 
 â–ª Jaggery - 3/4 cup
 (I've used date palm jaggery - Khajur gud) 
 ▪ Milk - 4 cups
 â–ª Ghee - 2tbspn 
 ▪ Chopped Cashew nuts 10-12
 â–ª Chopped Almonds 10-12 
 â–ª Green cardamom (crushed) - 2
 â–ª Bay leaf - 1
METHOD â–¶ Step 1 Take a deep pan and heat milk in it. Once it comes to a boil add the rice and keep stirring occasionally. Add the bay leaf and the crushed green cardamom to it.
â–¶ Step 2 Take another pan and heat the ghee in it. Add cashew nuts and almonds to it and saute it until golden brown.
â–¶ Step 3 Transfer the sauted nuts into a bowl.
▶ Step 4 On the same pan then add ½ cup water and the jaggery and stir continuously till the jaggery dissolves. [ Note - Do not over cook the jaggery ]
â–¶ Step 5 Switch off the heat and let it cool down slightly.
â–¶ Step 6 Meanwhile keep stirring the rice occassionally. Once the rice is fully cooked, cool it down to room temperature.
â–¶ Step 7 Add the sauted nuts and the jaggery syrup to the rice mixture and mix well.
â–¶ Step 8 Garnish with your favourite nuts and kesar. Serve cold.
{ Note - Do not put the jaggery mixture when the kheer is hot, or else the milk will curdle. }
