Ash Gourd kofta | rakh lauki ke kofte | chal kumura'r Kofta


Ash Gourd or wax gourd is eaten as a vegetable and used to prepare petha. wax gourd or winter melon are traditionally used to prepare a wide variety of Indian dishes and paired with pulses. Ash gourd’s low calorie, low carb, high water, and high fiber contents provide a nutrient combination that may promote digestive health and help you maintain a healthy weight. But many people do not like eating this because of how it tastes. So here is this recipe you need to try and trust me you'll be in love with Ash Gourd. 🤩✨



🥘 Cuisine - Indian 🕒 Preparation time - 20 minutes 🕒 Cooking time - 30 minutes 🍴 Servings - 4

INGREDIENTS ▶For Kofta ▪ 1 cup grated Ash gourd ▪ 1/4 cup besan / gram flour ▪ 1/4 cup rice flour ▪ Salt to taste ▪ 1/2 tspn kashmiri red chilli powder. ▪ 1/2 tspn turmeric powder (haldi) ▪ 1/2 tsp carom seeds (ajwain) ▪ Oil for frying

▶For the curry ▪ 1 tspn Ghee ▪ 1 tspn Ginger paste ▪ 1 tspn Garlic paste ▪ 1 large onion finely chopped ▪ 3 green chillies finely chopped ▪ 1/2 spn cumin seeds / jeera ▪ 1 bay leaf / tej patta ▪1 large tomato, finely chopped ▪ 1/2 tspn turmeric powder ▪ 1 tspn kashmiri red chilli powder ▪ 1 tspn coriander powder ▪ Salt - swaad anusaar. ▪ 1/2 cup yogurt ▪1 tspn dry fenugreek leaves ( kasuri methi) ▪ 1/2 tspn garam masala ▪ Finely chopped coriander leaves.

METHOD FOR KOFTA PREPARATION: Step 1 - Peel and grate the gourd. Squeeze well and transfer in a bowl. Step 2- Add rice flour, gram flour, carom seeds, salt and all the other spices. Step 3- Mix well and make round shaped kofta balls. Step 4- Deep fry and keep aside.

CURRY PREPARATION Step 1- Heat ghee in a pan. Add the bay leaf and cumin seeds. Step 2- Add the finely chopped chilies, onions and fry until golden brown. Step 3- Then add the ginger garlic paste, turmeric, coriander powder, red chili powder and salt. Step 4- Add finely chopped tomatoes and fry until the oil starts to seperate from the pan. Step 5 - Add the yogurt and water as required. [Note - Yogurt is an important ingredient as it helps to thicken the curry] Step 6- Bring it to a boil and then add the prepared kofta balls. Step 7 - Cover and let it cook for 5 minutes in medium flame. Finish it off with crushed dry fenugreek leaves. Step 8 - Once done, transfer it to a serving bowl and garnish with chopped coriander leaves.
